Peanut Butter Fudge 8 April 2009

I figured I’d start off with a recipe that almost everyone should like…Peanut Butter Fudge!  This is a recipe from my family.

Ingredients

  • 4 1/2 cups sugar
  • 1 (12 oz.) can evaporated milk
  • 2 sticks margarine or butter, cut up
  • 1 package chocolate chips
  • 2 cups nuts or 1 1/2 cup peanut butter
  • 1 1/2 Tbsp. vanilla

Directions

  1. In large mixing bowl put the butter, chocolate chips, peanut butter, and vanilla in a mixing bowl.  Set aside
  2. Bring sugar and evaporated milk to a rolling boil in a saucepan over low heat.
  3. Stir and cook for 7 minutes.
  4. Pour over other ingredients in the mixing bowl and stir until all ingredients are melted and mixed.
  5. Pour into 9×13″ pan.
  6. Cool and store in fridge.

I usually line the pan with aluminum foil or wax paper to make it easier to remove and cut once it is cooled.  This recipe makes A LOT of fudge, so I’ll often make a half a batch and only use a 9×9″ pan.
