How To Peel a Peach and 1001 Other Things Every Good Cook Needs To Know ~ by Perla Meyers
This is my favorite cookbook, not only of the ones I own but of any that I have seen. It contains tasty (and descriptively named) recipes such as Cream of Asparagus and Spring Onion Soup (p108), Roasted Sea Bass with a Fricassee of Fennel and Potatoes (178-9), and Perfectly Roasted Turkey with a Mustard-Herb Rub (216-7). But this book comes with a bonus; it comes with advice on everything fromwhat to look for in a good knife, to storing chocolate, to which pear is best for what. I find myself going to this book about once a week to see what it says about peeling asparagus or picking the freshest herbs. The sections include: Kitchen Equipment and Utensils, The Cook’s Pantry, Vegetables and Herbs, Seafood, Poultry, Meat, Pasta/Grains/Beans, Fruit, The Grill, Basic Recipes, Sources for Equipment and Ingredients, and Index. Even if you don’t think you need information like this, the recipes range from simple to complex with tastes that will please a variety of palletes.
